Nutty Energy Bites

July 27, 2014

I am definitely a snack person. I try not to leave more than 3 and a half hours without eating as I tend to get very ‘hangry’. Hungry plus angry. We have all been there. Fuelling your body on a consistent bases allows your body to find its own natural rhythm. If you leave it too long and you aren’t supplying your body with the right fuel your energy levels will crash which will in turn more than likely make you reach for caffeine or sugary foods to pick you up. That is not what we want as your blood sugar levels will be on a roller coaster of ups and downs all day long.  If you don’t feed your body on a regular basis your body will enter starvation mode and will slow down your metabolism to conserve energy for a later date. So you might think that you ‘saving calories’ by not snacking but when snacking is done right it will help keep your metabolism humming along and burning fat.

These nutty energy bites are great for satisfying your sweet tooth in a healthy way. Cinnamon is added into the mix as it is an amazing spice to help regulate blood sugar levels. The bites are high in protein and healthy fats, a winning combo to help boost your metabolism. Make these on the weekend and enjoy throughout your week for a delicious and nutritious snack. They can also be enjoyed as an on the go breakfast option or as a yummy dessert served with some plain greek yoghut and berries.

Ingredients

(Makes 6 to 12 bites depending on size)

– 3/4 of a cup of almonds

– 3/4 of a cup of pecans

– 1 cup of medjool dates

– 2 tablespoons of milled flax seed

– 2 tablespoons of chia seeds

– 1 tablespoon of coconut oil

– 2 tablespoons of cinnamon

– Desiccated coconut

Directions

1. Add all the ingredients except the dates and coconut into a food processor and blend until  a flour consistency is formed
2. Pit the dates, add and blend until a sticky mixture is produced
3. Form bite size balls and roll them in the desiccated coconut
4. Store in the freezer for an hour to set
5. Keep in the fridge in an air tight container
6. Enjoy
