These delicious pancakes are gluten free, refined sugar free and taste so delicious. I always make sure that I have a good protein packed breakfast to keep my energy levels up throughout the morning and these pancakes really do the trick. I have added chocolate protein powder to the mixture to bump up the protein content. At the moment my go to brand for protein powder has been Sunwarrior. They do a great selection of plant based protein powders but feel free to use any brand that works for you. I topped the pancake off with a spoonful of greek yoghurt to add some creaminess, raspberries for a boost of natural sweetness and a hit of antioxidants as well as a sprinkle of cacao nibs for an added energy boost.
– 2 Eggs
– 1 Scoop Chocolate Protein PowderÂ
– 2 Tbsp Gluten Free Oats
– Splash of Almond Milk
– Total 0% Greek Yoghut
– Cacao Nibs (Optional)
Add the eggs, protein powder, oats and almond milk into a blender and blend until smooth. Heat a pan and add a tsp coconut oil. Pour in 1/3 of the mixture and cook until golden brown on both sides. Repeat this until you have used up all the mixture. Top with 1 tbsp Greek Yoghut and raspberries. For an optional boost you can sprinkle on some cacao nibs for a chocolatey crunch.
Tip: If you are short on time you can make one big pancake by using all the mixture at once. Feel free to play around with the toppings.
